Spicy Brinjal Cabbage Curry Recipe
This is a typical South Indian dish prepared from the combination of Brinjal and Cabbage.

Ingredients
Brinjal - 4 nos
Onion - diced (1 cup)
Cabbage chopped - 1 cup
Chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Salt - as per taste
Curry Powder - 3/4th tsp
Cumin Seeds - a pinch
Oil - 3 to 4 tsp
Coriander leaves Chopped (for garnish)
Directions
Heat oil in a pan add mustard seeds.
When they splutter add cumin seeds , diced onion, chopped cabbage and lengthwise sliced brinjals.
Add all the spices and salt. Mix well and cover cook on low flame for 15-20 minutes occasionally sauteing them. Move the dish to a platter and garnish with finely chopped coriander leaves and serve them hot with roti's or rice .

Its just an interest and plan. First I check in my fridge what vegetables are available and how I can turn them
out into a dish for the next day. Some support and some encouragement works wonders.
