Directions
Prepare the vegetables.
Place the vinegar, spices and sugar into a large saucepan.
Heat gently until all the sugar has dissolved.
Stir in all the prepared vegetables.
Bring to the boil and simmer until the liquid has reduced to a thick syrup.
Pour into warmed jars, place a waxed disc on top of the relish and seal with cellophane.
