12 pounds ripe tomatoes
 
1 cup chopped onions
 
1 tablespoon salt
 
1 cup sugar
 
1 teaspoon black pepper
 
1/2 teaspoon celery seed
 
1 teaspoon mustard seed
 
1 tablespoon whole cloves
 
1 stick cinnamon, broken
 
1 1/2 cups vinegar
 
1/4 teaspoon cayenne pepper

Directions

1. Core and chop the tomatoes. Cook together tomatoes and onions until soft and press mixture through a fine sieve.
2. Return puree to heat and cook until reduced one-half, stirring occasionally. Add remaining ingredients including spices tied in a bag. Continue cooking, uncovered, to desired consistency, about four hours. Discard spice bag. Seal in hot sterilized jars.
