Spicy Tomato And Chorizo Sausage Recipe
Ingredients
| Potatoes | 4 Large | |
| 30 ml / 2 tbsp olive oil | ||
| Spanish onion | 1 , chopped | |
| Garlic | 3 Clove (5gm), crushed | |
| 5 ml / 1 tsp paprika | ||
| 450 g / 1 lb tomatoes, preferably plum, skinned and roughly chopped | ||
| 150 g / 5 oz chorizo or other spicy sausage, sliced | ||
Directions
MAKING
1)Bake potatoes in hot oven.
2)In a saucepan, heat some oil and saute onions in it until translucent and light brown in color.
3)Add in paprika and garlic. Saute for 2 minutes.
4)Add in chopped tomatoes and boil. Now add chorizo. Reduce heat and simmer for 20 to 25 minutes.
5)Once potatoes are baked and done, make slits on top surface and squeeze them to open slightly.
SERVING
6)Top with the sausage mixture and serve steaming hot.
