Spicy Thai Salad Recipe
Ingredients
| Cucumber | 1 Large | |
| Carrots | 2 Medium | |
| 1/2 cup chopped coriander leaves | ||
| 2 dry red chillies, seeded and broken | ||
| Lime juice | 2 Tablespoon (Dressing) | |
| 1 tbsp soya sauce | ||
| Fish sauce | 1 Tablespoon (Dressing) | |
Directions
Peel cucumber, remove and discard seeds and grate flesh.
Scrape carrots and grate.
Toss vegetables with coriander leaves in a salad bowl.
Combine ingredients for dressing in a small bowl and whisk well.
Pour over salad and toss well to mix.
Serve at room temperature with warm rice.
