Ingredients

 Black pepper-1/4 cup cracked
 Jalapeno jelly-5 1/4 tablespoons
 Orange-juice-1 tablespoon
 Balsamic vinegar1 1/2 Tablespoon
 Garlic-1 1/2 teaspoons-minced
 Shallots-1 teaspoon-minced
 Dry white wine1/4 Cup (16 tbs)
 Worcestershire sauce1 Teaspoon
 Butter-6 ounces -softened

Directions

GETTING READY
1. In a large saucepan, tip in all the ingredients except the butter
2. Bring the saucepan to the boil and cook gently till it becomes a thick paste
3. Set aside to cool

MAKING
4. In a large food processor bowl, tip in the butter
5. Add the cooked paste the bowl
6. Process till a smooth colored paste is acquired. Do not allow the butter to melt

FINALIZING
7. Scrape the butter off the processor blades and shape into a square
8. Freeze till required

SERVING
9. Serve with baked fish, meats and vegetables.
