Directions

MAKING
1. For spicy spinach, in a pan take some water, bring it to a boil.
2. Add spinach in hot water. Wait for 2-3 minutes, and then drain and squeeze out water from it. Chop.
3. In a pan heat some olive oil and sauté garlic in it.
4. Throw in spinach and mix well. Insert tomatoes, sprinkle lemon zest and red pepper on top. Toss it well and cook until tender.
5. For gremolata in a small bowl, combine garlic, lemon zest, orange zest, and parsley.
6. Sprinkle some olive oil, pine nuts, salt and pepper on top. Mix it well.

SERVING
7. Serve gremolata on top of grilled salmon, spicy spinach, and green salad.

TIPS
You may also add mint while preparing gremolata.
