Ingredients

 Yellow squash1 Cup (16 tbs), cut into pieces
 Jicama1/2 Cup (16 tbs), cut into pieces
 Apple1 Small, cut into pieces
 Onion2 Tablespoon, sliced
 Lettuce leaves8
 1/4 cup spicy mixed vegetable juice
 1 tablespoon balsamic or red wine vinegar
 Parsley1 1/2 Teaspoon, chopped
 Olive oil1 Teaspoon
 Garlic1 Clove (5gm)

Directions

1. In medium bowl combine first 4 ingredients; mix well. Line serving platter with lettuce leaves; top with squash mixture.
2. In blender combine remaining ingredients and process until smooth. Pour over salad.
