Spicy Southwestern Salad Recipe
Ingredients
| Yellow squash | 1 Cup (16 tbs), cut into pieces | |
| Jicama | 1/2 Cup (16 tbs), cut into pieces | |
| Apple | 1 Small, cut into pieces | |
| Onion | 2 Tablespoon, sliced | |
| Lettuce leaves | 8 | |
| 1/4 cup spicy mixed vegetable juice | ||
| 1 tablespoon balsamic or red wine vinegar | ||
| Parsley | 1 1/2 Teaspoon, chopped | |
| Olive oil | 1 Teaspoon | |
| Garlic | 1 Clove (5gm) | |
Directions
1. In medium bowl combine first 4 ingredients; mix well. Line serving platter with lettuce leaves; top with squash mixture.
2. In blender combine remaining ingredients and process until smooth. Pour over salad.
