Spicy Smoked Duck Recipe
Spicy smoked duck is an oven cooked duck preparation made with soy sauce. Flavored with added crushed fennel seeds and liquid smoke to taste, the duck is spiced with cloves and pepper. Roasted to doneness, it can be served with sides of choice.
Ingredients
| Duckling | 1 , frozen | |
| 1/4 cup Lite Soy Sauce | ||
| 1 teaspoon liquid smoke seasoning | ||
| 1/2 teaspoon fennel seed, well crushed | ||
| Pepper | 1/4 Teaspoon | |
| Ground cloves | 1/8 Teaspoon | |
Directions
Remove and discard giblets and neck from duckling cavity.
Wash duckling; drain and gently pat dry with paper towels.
Combine lite soy sauce, liquid smoke, fennel, pepper and cloves.
Brush body cavity with sauce mixture.
Place duckling, breast side up, on rack in roasting pan.
Roast at 425 °F.1 hour.
Reduce oven temperature to 350°F.
Continue roasting 45 minutes, or until tender.
Brush skin of duckling several times with sauce mixture during last 30 minutes of cooking time.
Let stand 15 minutes before carving.
