Spicy Rice With Bulgur And Pasta Recipe

Ingredients

 
2 teaspoons olive oil
 
1 large yellow onion, chopped
 
1 medium-size sweet green pepper, cored, seeded,and chopped
 
1 clove garlic, minced
 
3/4 cup white basmati or long-grain white rice
 
1/2 cup orzo or elbow macaroni
 
1 cup Chicken Stock or Vegetable Stock or low-sodium chicken broth
 
2 1/4 cups boiling water
 
1/4 cupbulgur
 
2 teaspoons each chili powder and ground cumin
 
1/4 teaspoon each salt and black pepper, or to taste
 
4 ounces Monterey Jack cheese with jalapeno peppers, cut into 1/2-inch cubes

Directions

1 In a large saucepan, heat the oil over moderate heat.Add the onion, green pepper, and garlic and saute for 5 minutes or until the vegetables are softened.
Stir in the rice and pasta and cook, stirring, 5 minutes more or until the rice and pasta are lightly golden.
2 Stir in the stock, water, bulgur, chili powder, cumin, salt, and black pepper.
Lower the heat and simmer, covered, for 20 minutes, stirring once or twice to prevent sticking.
Before serving, stir in the cheese.
Accompany with pinto beans and cucumber salad.
