Directions
1. Preheat the oven to 400°. In a small skillet, cook the garlic in the oil over low heat for about 5 minutes without browning. Strain the oil through a fine sieve and discard the garlic. Return the garlic-flavored oil to the skillet and add the cumin, paprika and cayenne. Cook over low heat, stirring occasionally, until fragrant, about 1 minute.
2. Place the pumpkin seeds on a baking sheet. Scrape the spice mixture over the seeds, sprinkle with the salt and toss to coat evenly. Spread the seeds in a single layer and bake in the oven for about 5 minutes, or until they turn light brown. The seeds will pop and dance while cooking.
