Ingredients

 
1 tsp. dry yeast
 
1/4 cup warm water
 
1 cup skim milk
 
3/4 cup canned pumpkin
 
1 egg white
 
2 tsp. oil
 
2 cup whole wheat flour
 
2 tsp. brown sugar
 
1/2 tsp. cinnamon
 
1/4 tsp. nutmeg
 
1/8 tsp. ground cloves
 
1/8 tsp. ground ginger
 
2 cup unbleached flour

Directions

1. Sprinkle yeast into warm water. Set aside.
2. Heat milk, pumpkin, egg white, and oil until very warm. Set aside.
3. Combine whole wheat flour, brown sugar, and spices. Add pumpkin mixture. Stir well.
4. Add yeast mixture and beat until smooth, about 3 minutes.
5. Stir in enough unbleached flour to make a soft dough. Knead 5 minutes on floured surface.
6. Cover; let rise 20 minutes.
7. Shape into 2-inch balls. Place each ball in nonstick muffin pan. Cover; let rise until double, about 20 minutes.
8. Bake at 375° for 20 minutes or until done.
