Spicy Prune Cake Recipe
Ingredients
| Boiling water | 1 Cup (16 tbs) | |
| 1 cup cut-up pitted uncooked prunes | ||
| All purpose flour | 2 Cup (16 tbs) | |
| Sugar | 1 1/2 Cup (16 tbs) | |
| Baking soda | 1 1/4 Teaspoon | |
| Salt | 1 Teaspoon | |
| Cinnamon | 1 Teaspoon | |
| Nutmeg | 1 Teaspoon | |
| Cloves | 1 Teaspoon | |
| Salad oil | 1/2 Cup (16 tbs) | |
| Eggs | 3 | |
| Vanilla | 1 Teaspoon | |
| Nuts | 1 Cup (16 tbs), chopped | |
| Satiny Beige Frosting | ||
Directions
Pour boiling water over prunes in large mixer bowl; let stand 2 hours.
Heat oven to 350°.
Grease and flour oblong pan, 13 X 9 X 2 inches, or 2 round layer pans, 9 X 1 1/2 inches.
Measure remaining ingredients except frosting into mixer bowl with prunes.
Blend 1 minute on low speed, scraping bowl constantly.
Beat 2 minutes on medium speed, scraping bowl occasionally.
Pour batter into pan(s).
Bake until wooden pick inserted in center comes out clean, oblong 45 to 50 minutes, layers 35 to 40 minutes.
Cool.
Frost cake with Satiny Beige Frosting.
