Spicy Pork Skewers With Onions And Peppers Recipe
Ingredients
| 3 tablespoons reduced-sodium soy sauce | ||
| Lime juice | 3 Tablespoon | |
| 3 tablespoons packed light brown sugar | ||
| Chipotle | 2 Teaspoon, chopped | |
| Garlic | 4 Clove (5gm), finely chopped | |
| 1 pound boneless pork loin chops, trimmed and cut into 3 x 1/2-inch strips | ||
| 2 sweet onions (such as Vidalia), thickly sliced | ||
| 3 assorted color bell peppers, cut into four pieces and seeded | ||
| Olive oil | 2 Teaspoon | |
| Salt | 1/4 Teaspoon | |
Directions
Combine the soy sauce, lime juice, and sugar in a medium bowl; stir until the sugar is dissolved.
Place 4 tablespoons of this mixture in a small bowl; stir in 1/2 teaspoon of the chipotle and set aside for a sauce.
Add the remaining 1 1/2 teaspoons chipotle and the garlic to the medium bowl, stirring until blended.
Add the pork and toss to coat; let stand for 15 minutes.
Spray the grill rack with non-stick spray; preheat the grill to medium-high or prepare a medium-hot fire.
Brush the onions and bell peppers with the oil and sprinkle with the salt.
Place on the grill rack and cook until browned and softened, about 4 minutes on each side.
Meanwhile, thread the pork strips on 8 metal skewers.
Grill, turning frequently, until lightly browned and just cooked through, about 4 minutes.
Slice the peppers into 1 -inch wide strips and halve the onion slices.
