Spicy North African Lentils Recipe
Ingredients
| 3 cups orange lentils | ||
| Salt | 1 1/2 Teaspoon | |
| Olive oil | 6 Tablespoon | |
| Onions | 11/2 Large, minced | |
| 1 1/2 teaspoons each grated ginger, mashed garlic, coriander, turmeric, crushed cumin, and cardamom | ||
| Cayenne pepper | 3/4 Teaspoon | |
| Tomato and lemon slices for garnish | ||
Directions
In a medium saucepan cover the lentils with water.
Add the salt and cook until tender, about 30 minutes.
Drain and mash the lentils slightly.
In the same pan heat the oil and saute the onions until golden.
Add the spices and simmer for about 5 minutes.
Add the lentils, stirring well.
Heat through.
The dish should be thick, as a puree.
Adjust the consistency if necessary by adding a little water or chicken stock.
Add garnish.

This is delicious! I recommend it highly for taste and simplicity. I sis slightly increase the cayenne and also added a dash of vinegar.. With these tweaks it reminds me even more of lentils I have had in some amazing ethioopian restaurants on the US east coast. Thanks for sharing this!
