 Arugula1 Bunch (100gm), trimmed
 Radicchio - 1 head, chopped
 Escarole2 Cup (16 tbs)
 Red onion1/4 Medium, thinly sliced
 Extra-virgin olive oil - 1/4 cup
 Garlic1 Clove (5gm)
 Balsamic vinegar1/3 Cup (16 tbs)
 Salt1 To taste
 Ground black pepper1 To taste

Directions

MAKING
1 On a large platter, arrange salad greens and red onion .
2 In a small pan, heat oil over moderate heat and add garlic.
3 Let the garlic simmer in oil to infuse the flavour.
4 Transfer the garlic and oil mixture into a small bowl.
5 Wipe the pan and return to heat.
6 Add balsamic vinegar.
7 Reduce vinegar by half by cooking on high heat,for 30 seconds.
8 In the saucepan add oil in a stream and whisk vigorously to combine with vinegar.

SERVING
9 Sprinkle the dressing over salad and season with salt and pepper.
