Spicy Greens With Warm Balsamic Dressing Recipe
Ingredients
| Arugula | 1 Bunch (100gm), trimmed | |
| Radicchio - 1 head, chopped | ||
| Escarole | 2 Cup (16 tbs) | |
| Red onion | 1/4 Medium, thinly sliced | |
| Extra-virgin olive oil - 1/4 cup | ||
| Garlic | 1 Clove (5gm) | |
| Balsamic vinegar | 1/3 Cup (16 tbs) | |
| Salt | 1 To taste | |
| Ground black pepper | 1 To taste | |
Directions
MAKING
1 On a large platter, arrange salad greens and red onion .
2 In a small pan, heat oil over moderate heat and add garlic.
3 Let the garlic simmer in oil to infuse the flavour.
4 Transfer the garlic and oil mixture into a small bowl.
5 Wipe the pan and return to heat.
6 Add balsamic vinegar.
7 Reduce vinegar by half by cooking on high heat,for 30 seconds.
8 In the saucepan add oil in a stream and whisk vigorously to combine with vinegar.
SERVING
9 Sprinkle the dressing over salad and season with salt and pepper.
