Spicy Ginger Wafers Recipe
Ingredients
| All purpose flour | 2 Cup (32 tbs), sifted | |
| Ground ginger | 3 Teaspoon | |
| Baking soda | 2 Teaspoon | |
| Ground cinnamon | 1 Teaspoon | |
| Salt | 1⁄2 Teaspoon | |
| Butter | 3⁄4 Cup (12 tbs), softened | |
| Sugar | 1 Cup (16 tbs) | |
| Egg | 1 | |
| Molasses | 1⁄4 Cup (4 tbs) | |
| Sugar | 1 |
Directions
1. Sift flour, ginger, soda, cinnamon and salt onto waxed paper.
2. Cream butter or margarine with sugar until fluffy in a medium-size bowl; beat in egg and molasses.
3. Stir in flour mixture, one third at a time, until well blended.
4. Roll dough, a teaspoonful at a time, into small balls; roll each in sugar in a pie plate to coat. Place, 2 inches apart, on cookie sheets. Flatten each with bottom of glass.
5. Bake in moderate oven (350°) for 13 minutes, or until tops are crackled. Remove to racks. Cool.
