Ingredients
| Tofu | 1 pound | |
| Salt | 1/4 Teaspoon | |
| 3 eggs, beaten lightly | ||

| Peanut oil | ||
| Root ginger | 1/4 Teaspoon, crushed | |
| 1 green onion, including top, finely chopped | ||
| Soy sauce | 1 Tablespoon | |
Directions
Cut tofu in half horizontally; sprinkle with salt; let stand 10 minutes.
Pat dry; cut tofu in lx2-inch pieces.
In bowl, mix next three ingredients until smooth.
Heat 1 tablespoon peanut oil in a wok until hot.
Dip tofu pieces, one at a time, in batter; fry three to four at a time in oil until golden brown.
Heat 2 tablespoons oil in wok.
Add ginger root and green onion; stir fry 10 seconds.
Return tofu to wok with soy sauce; cover; cook 1 minute.
Serve immediately.
