Spicy Cucumber-Orange Salad is my favorite salad. I tasted Spicy Cucumber-Orange Salad first at my friend's home. It was so good I had to learn how to make it at home. Yum, yum, yummy!

Ingredients
1 Hot House Cucumber, thinly sliced
1 large orange, peeled, thinly sliced and cut in quarters
1/2 of a red onion, thinly sliced and separated into rings
1 large Fresh Anaheim Chile, seeded and chopped
1 cup (240 ml) white vinegar
1/3 cup (80 ml) salad oil
1 tbs (15 ml) Fresh Oregano, chopped or 1 tsp (5 ml) crushed dried oregano
2 tsp (10 ml) Fresh Sage, chopped or 1/2 tsp (3 ml) ground dried sage
1 tbs (15 ml) Fresh Cilantro, chopped
1/2 tsp (3 ml) salt
1 tsp (5 ml) ground black pepper
Directions
In a deep glass bowl toss together the cucumber slices, orange pieces, onion and Chile.
In a covered container place the vinegar, oil and remaining ingredients; shake together until blended.
Pour over salad mixture; stir to coat all ingredients.
Cover and chill 3 hours or overnight, stirring occasionally.
