Ingredients

 Canned whole tomatoes16 Ounce, drained, reserving juice (1 Can)
 Couscous1⁄2 Cup (8 tbs)
 Chili powder1 1⁄2 Tablespoon
 Ground cumin1 Teaspoon
 Dried oregano leaves1 Teaspoon
 Lean ground beef1 Pound
 Onion1 Large, chopped
 Chopped green pepper1⁄4 Cup (4 tbs)
 Garlic1 Clove (5 gm), minced
 Raisins1 Cup (16 tbs)
 Salt3⁄4 Teaspoon
 Pepper1⁄4 Teaspoon
 Mini whole wheat pita pockets12
 Snipped parsley1⁄4 Cup (4 tbs)
 Plain yogurt1 Pint

Directions

Place reserved tomato juice in 4-cup measure.
Add enough water to measure 2/3 cup.
Microwave on HIGH (100%) until boiling, 1 1/2 to 2 minutes.
Add couscous, chili powder, cumin and oregano.
Mix well.
Cover and set aside.
Combine beef, onion, green pepper and garlic in 3-quart casserole.
Microwave on HIGH (100%) until beef is no longer pink, 6 minutes, stirring once.
Drain.
Add couscous mixture, tomatoes, raisins, salt and pepper.
Mix well.
Microwave on HIGH (100%) until hot, 7 to 9 minutes.
Let stand 10 minutes.
Spoon beef mixture into warmed pita pockets.
Stir parsley into yogurt.
Top each pita with yogurt mixture.
