Spicy Corn Muffins Recipe
Ingredients
| 1 cup self-rising corn meal | ||
| All purpose flour | 1/2 Cup (16 tbs) | |
| Chili powder | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Onion | 2 Tablespoon, finely chopped | |
| Buttermilk | 3/4 Cup (16 tbs) | |
| Eggs | 2 , beaten | |
| Honey | 2 Tablespoon | |
| Vegetable oil | 2 Tablespoon | |
| 1 cup French-fried onions, finely crushed | ||
Directions
In medium mixing bowl, sift together corn meal, flour, chili powder and salt.
Add onion, buttermilk, eggs, honey and oil.
Spoon batter into well-greased muffin pan, filling each cup 1/2 full.
Sprinkle French-fried onions over top.
Convection Bake at 375°F for 12 to 15 minutes.
