Ingredients

 
100g unsalted peanuts
 
350g boneless chicken, skin removed
 
2 tblspn sunflower oil
 
1 dried red chilli
 
2 tblspn dry sherry
 
1 tblspn dark soy sauce
 
Pinch of sugar
 
1 garlic clove, crushed
 
2 spring onions, chopped
 
2.5cm piece fresh root ginger, peeled and finely chopped
 
1 tspn wine vinegar
 
2 tspn sesame oil

Directions

Immerse the peanuts in boiling water for about 2 minutes.
Drain and remove the skins, then dry well.
Cut the chicken into cubes.
Heat the oil in a wok or frying pan.
Crumble in the chilli, add the chicken pieces and peanuts and stir-fry for 1 minute.
Remove from the wok.
Place the wine or sherry, soy sauce, sugar, garlic, spring onions, ginger and vinegar in the wok.
Bring to the boil, then simmer for 30 seconds.
Return the chicken, chilli and peanuts to the wok and cook for 2 minutes.
