Ingredients

 
2 cups hot cooked brown rice
 
3/4 cup grated sharp Cheddar cheese
 
1 egg, lightly beaten
 
1/2 teaspoon salt
 
1/8 teaspoon freshly ground black pepper
 
2 tablespoons grated onion
 
1 & 1/2 tablespoons spicy Creole or Dijon mustard
 
4-ounce can jalapeno peppers, seeded and chopped
 
1 cup fine dry whole wheat bread crumbs
 
Vegetable oil for deep frying

Directions

Combine all the ingredients, with the exception of the bread crumbs.
Chill.
Form into 1-inch balls.
Roll the balls in the bread crumbs and fry, a few at a time, in deep oil heated to 375 degrees on a deep-fat thermometer, for about 3 minutes, or until golden.
Drain on paper towels.
