Spicy Broiled Salmon Recipe
Ingredients
| Orange juice | 1/4 Cup (16 tbs) | |
| 2 tablespoons dry vermouth or dry white wine | ||
| Lime juice | 2 Tablespoon | |
| Jalapeno pepper | 1 To taste, finely chopped | |
| Garlic | 1 Clove (5gm), minced | |
| 1 teaspoon fresh thyme, or 1/4 teaspoon dried | ||
| Allspice | 1/8 Teaspoon | |
| 4 salmon fillets, with skin (about 1 1/2 pounds total) | ||
| 1 1/2 tablespoons unsalted butler, cut into small pieces | ||
Directions
1. In a small bowl, combine the orange juice, vermouth, lime juice, jalapeno pepper, garlic, thyme, and allspice. Place the fillets in an ovenproof dish and pour the marinade over them. Let the fillets marinate at room temperature for 15 minutes. Preheat the broiler.
2. Strain and reserve the marinade. Broil the fish about 4 inches from the heat, basting every 3 minutes with the marinade, for 10 to 12 minutes, or until the fish just flakes when tested with a fork.
3. Scatter the butter over the top, return the fillets to the broiler, and cook them a few seconds to melt the butter. Serve hot.
