 Peppercorns10 To taste
 Whole Cloves4
 Bay leaves3
 Mustard seeds1/2 Teaspoon
 Dried oregano1/2 Teaspoon
 Dried basil1/2 Teaspoon
 Pepper red1/2 Teaspoon, crushed
 Celery seeds1/8 Teaspoon
 Dried whole thyme - Dash
 Water2 1/2 Quart
 Salt1/2 Teaspoon
 Lime1
 Lemon1
 Garlic1 Clove (5gm), crushed
 Large shrimp3 Pound, unpeeled

Directions

MAKING
1. In a doubled cheesecloth bag combine the first 9 ingredients and tie securely with a string.
2. In a large Dutch oven bring 2 1/2 quarts water to a boil.
3. Return to a boil adding salt, lime, lemon, garlic and herb bag and boil for 2 to 3 minutes.
4. Add shrimp and return to a boil.
5. Reduce heat and simmer, uncovered for 3 to 5 minutes.
6. Drain well, rinse with cold water and chill.
7. Peel and devein shrimp, leaving tails on, if desired.

SERVING
8. Serve the shrimp spooning around the cooked sauce or as desired.
