2 cups (480 ml) dry black beans
1 red onion, diced
4 cloves garlic, minced
1 tbs (15 ml) Southwestern Oil salt, to taste pepper, to taste
1 medium ripe tomato, diced
4 tbs (60 ml) cilantro, chopped
1 tbs (15 ml) lime juice
Directions
Measure the beans into a 4-quart saucepan and cover with water.
Bring to a boil for 2 minutes.
Remove from heat and let stand for 1 hour or more.
Meanwhile, prepare the other ingredients.
Drain the beans then cover them with clear cold water.
Bring to a simmer, add onions, garlic and oil.
Simmer gently for 40 minutes or until tender.
Season with salt and pepper.
Continue to simmer until beans are thoroughly cooked, adding more water if necessary.
Stir in tomato, cilantro and lime juice.
