Spicy Black Bean Salad Recipe
Ingredients
| Black beans | 4 Cup (16 tbs), drained, rinsed | |
| Lime juice | 3 Tablespoon, squeezed | |
| Olive oil | 2 Tablespoon | |
| Red wine vinegar | 1 Tablespoon | |
| Salt | 1 Teaspoon | |
| Cayenne pepper | 1/2 Teaspoon | |
| Chopped | 2 , chopped | |
| Cilantro | 1/4 Cup (16 tbs), chopped | |
| Roasted red bell peppers | 2 To taste, chopped |
Directions
1. Place the beans in a medium-sized ceramic or glass bowl and add lime juice, olive oil, vinegar, salt, and cayenne, and mix until well combined.
2. Top with scallions, cilantro, and peppers, but do not combine.
3. Cover and refrigerate for at least 2 hours to let the flavors meld.
4. Toss just prior to serving.
