Ingredients

 Condiments: Shredded lettuce, diced tomatoes, shredded Cheddar or jack cheese, sour cream, sliced avocado (coated with lemon juice to prevent browning), cilantro sprigs, and taco sauce
 Flour tortillas6 Large
 Salad oil1/4 Cup (16 tbs)
 Round steak2 Pound, cut into strips
 Onion1 Large, chopped
 Garlic2 Clove (5gm), pressed
 1 1/2 teaspoons each ground cumin and chili powder
 Oregano leaves1/4 Teaspoon
 Red cayenne pepper1/8 Teaspoon
 Salt To Taste

Directions

Prepare condiments and place on a platter or in individual bowls.
Stack tortillas, wrap in foil, and place in a 350° oven for 15 minutes or until heated through.
Meanwhile, heat 2 tablespoons of the oil in a wide frying pan over medium-high heat.
Add half the meat and stir-fry until meat is brown on the outside but still pink within (about 5 minutes); remove from pan.
Repeat with remaining 2 tablespoons oil and remaining meat.
To drippings, add onion, garlic, cumin, chili powder, oregano, and red pepper.
Reduce heat to medium and cook, stirring, until onion is soft (10 to 15 minutes).
Add meat; stir until well combined and cook just until heated through.
Season to taste with salt.
To eat, spoon filling onto a warm tortilla, top with condiments, and roll up.
