Spicy Beef And Asparagus Recipe
Ingredients
| 1 pound beef top round steak, trimmed of fat | ||
| Cornstarch | 1 Tablespoon | |
| Water | 1 Tablespoon | |
| Dry sherry | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Several dashes bottled hot pepper sauce | ||
| Beef broth | 1/4 Cup (16 tbs) | |
| Soy sauce | 1 Tablespoon | |
| Catsup | 1 Tablespoon | |
| Red wine vinegar | 1 Teaspoon | |
| Sugar | 1/2 Teaspoon | |
| Cooking oil | 2 Tablespoon | |
| Garlic | 1 Clove (5gm), minced | |
| 3/4 pound fresh asparagus, cut into 1-inch lengths, or one 10-ounce package frozen cut asparagus, thawed | ||
| 1 cup sliced cauliflower flowerets | ||
| 1 small sweet red or green pepper, cut into narrow strips | ||
| 1 small onion, cut into thin wedges | ||
Directions
Partially freeze beef; thinly slice the meat across grain into strips.
Combine cornstarch, water, sherry, salt, pepper, and hot pepper sauce.
Add meat, mixing well.
Combine beef broth, soy sauce, catsup, vinegar, and sugar; set aside, Preheat wok or large skillet over high heat.
Add 1 tablespoon of the oil.
Stir-fry garlic in hot oil for 30 seconds.
Add half the meat.
Stir-fry 2 to 3 minutes or till just browned, Remove from skillet.

Add remaining oil if necessary Add asparagus and cauliflower; stir-fry for 4 minutes, [If using frozen asparagus that you've thawed, add it 2 minutes after the cauIiflower is added.)
Add the red or green pepper and onion; stir-fry about 2 minutes more or till asparagus is crisp-tender.
Return meat to skillet.
Stir in soy sauce mixture.
Cook and stirtill bubbly.
Cover and cook l minute more,
