This recepie was one of my first from this site. It turned out to be the best steak I have ever made. Having never flambed before I realized my kitchen is far too small and my stove is much too close to a wall. I used brandy instead of cognac because that is what I had. It was a much larger flame than anticipated. My advice, keep that in mind when making this at home. Also the sauce is not for looks. It tastes great but has takes a bit away from the presentation of the steak.
