Ingredients

 Aubergines6 , halved
 Bay Leaf1
 Onion1 Large, finely chopped
 Garlic2 Clove (5gm), chopped
 2 tablespoons ghee or butter
 Coriander seeds2 Teaspoon
 Cumin seeds1 Teaspoon
 Red chillies4 , chopped
 Salt1 Teaspoon

Directions

MAKING
1. In a tin, put the aubergines qwith the cut side up, add bay leaf, quarter pint water
2. Place in an oven preheated to 325°F and cook for twenty five minutes
3. In a pan, add ghee or butter and fry onions and garlic for five minutes; add cumin, coriander, salt and chillies and rfy for another couple of minutes
4. On sheets of kitchen paper, pat dry the aubergines, scrape the flesh out, mash it and add it to the spice mixture; fry for a couple of minutes
5. Put the aubergine skins under medium hot grill for five minutes till dry and shrivelled

SERVING
6. Stir the skins into the fred mixture and serve
