Spicy Apple Carrot Muffins Recipe
Ingredients
| 1/2 cup non-fat dry milk powder | ||
| Baking powder | 3 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Ground allspice | 1/2 Teaspoon | |
| Nutmeg | 1/2 Teaspoon, grated | |
| Ground cinnamon | 1 Teaspoon | |
| 2 & 1/2 cups stoneground whole wheat flour | ||
| Honey | 1 Cup (16 tbs) | |
| 1 cup sunflower or other oil | ||
| Eggs | 4 standard | |
| Pure vanilla extract | 1 Teaspoon | |
| Grated apple | 1 Cup (16 tbs), unpeeled | |
| Carrot | 1 Cup (16 tbs), grated | |
Directions
1. Preheat the oven to 400 degrees.
2. In a large bowl, combine the dry milk, baking powder, salt, allspice, nutmeg, cinnamon, and flour.
3. Combine the honey, oil, eggs, and vanilla and stir into the dry ingredients. Fold in the apple and carrot. Spoon into oiled muffin tins until they are two-thirds full.
4. Bake for 15 to 20 minutes or until done.
