Spiced Cookies In-A-Hurry Recipe
Ingredients
1/2 cup (125 mL) butter or margarine
1/2 cup (125 mL) milk
2 cups (500 mL) sugar
1/4 cup (60 mL) unsweetened cocoa
1/4 tsp (1 mL) salt
1 tsp (5 mL) vanilla or almond extract
1/2 cup (125 mL) peanut butter
3 cups (750 mL) quick-cooking oatmeal, mixed with 1 teaspoon allspice (or mixture of ground cinnamon, ginger and cloves) and a pinch of nutmeg
Directions
Place in a microwave-safe bowl the butter or margarine and milk.
Microwave 1 minute at HIGH.
Stir.
Add sugar, cocoa and salt.
Microwave 4 minutes at HIGH.
Stir well.
Microwave 1 more minute at HIGH.
Add vanilla or almond extract and peanut butter.
Stir until well mixed.
Add the oatmeal.
Stir well and drop by teaspoons on waxed paper or cookie sheet.
Refrigerate 1 to 2 hours.
