Spiced Wild Rose Hip Wine Recipe

Ingredients

 
4 lbs. wild rose hips
 
1 lemon, thinly sliced
 
1 Tbsp. whole cloves
 
2 cinnamon sticks
 
3 lbs. sugar
 
1 gal. water
 
1 oz. yeast cake, crumbled

Directions

Wash hips well.
Crush with mallet and place in crock.
Pour over 1/2 gal.water.
Boil 1 1/2 lbs.sugar in 1 qt.water for 2 minutes.
Cool 10 minutes, then add lemon and spices.
Mix well.
Add yeast and let ferment 1 week.
Strain through several layers of cheese cloth into a 1 gal.jug.
Discard solids.
Boil 1 1/2 lbs.sugar in 3 qts.water for 4 minutes.
Cool 10 minutes, then add to rose hip liquor.
Fit with fermentation lock and cap.
Let age at least 6 months.
