Ingredients
| 100 gm puy lentils | ||
| 1 lemon (1/2 juiced, 1/2 wedged) | ||
| Garlic | 1/2 Clove (5gm), crushed | |
| 2 skinless salmon fillets | ||
| Garam masala | 1/2 Teaspoon | |
| A small bunch mint, chopped | ||
| 150 g tub natural low-fat yogurt | ||
| Flat-leaf parsley, chopped | ||
Directions
MAKING
1. Cook lentils until tender, about 5 minutes.
2. Drain excess water and add lentils to a bowl.
3. Add lemon juice, garlic and seasoning and toss to mix
4. Keep aside.
5. Rub the salmon fillets on both side with garam masala
6. Grill in oven or on a barbecue for about 2 -3 minutes on each side.
SERVING
7. Combine yogurt with half the mint.
8. Add remaining mint and parsley to the lentils.
9. Serve the salmon fillets with yogurts and lentils.
