Ingredients
1 pig's tongue (fresh)
3-4 tablespoons soy sauce
1 teaspoon sugar
Pinch salt
1/2 teaspoon ginger sherry
Little pepper
6 tablespoons water
Directions
Well wash and drain the tongue and have it ready.
Blend together the remaining ingredients and bring them to the boil in a pan into which the tongue will fit closely enough for the marinade (liquid) to cover it.
Leave to become cold.
Add the tongue; slowly bring the liquid to the boil then simmer very gently until the tongue is tender.
Skin it while it is fairly hot and leave it to become cold.
Place the tongue on a cutting board.
Place one hand flat on it and, with a sharp knife in the other, cut it into the thinnest possible slices diagonally or, as we might say, on the bias.
Arrange the slices in rows on a serving-dish.
