Spiced Homemade Tomato Soup Recipe
Ingredients
| Milk | 2 1/2 Cup (16 tbs) | |
| 3 tbs soft butter or margarine | ||
| Flour | 3 Tablespoon | |
| Salt | 1 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Tomatoes | 1 Can (10oz), peeled | |
| 3 to 3 1/2 cups when chopped | ||
| 1 onion, peeled and quartered | ||
| Celery leaves | 1 | |
| Sugar | 2 Tablespoon | |
| Dash of allspice or cloves | ||
| Pinch soda | ||
Directions
Scald milk in a large double boiler and stir in a smooth mixture of butter and flour.
Whisk and cook until smoothly thickened.
Pour tomatoes into a blender and add onion, celery leaves, sugar and allspice.
Cover and whiz until chopped.
If using fresh tomatoes, cut into pieces before adding to the blender.
Pour the tomato mixture into a saucepan and add soda.
Stir and bring to a boil.
Simmer 6 or 7 minutes or until onion bits are soft.
Stir slowly into the cream sauce and mix well.
Taste for seasoning.
Dilute if necessary with a little additional milk.
