Ingredients

 
1/4 cup plain low fat yogurt
 
2 teaspoons Oriental sesame or peanut oil
 
3/4 teaspoon cider vinegar
 
1/2 teaspoon minced fresh ginger or 1/8 teaspoon ground ginger
 
1/4 teaspoon each ground cumin and coriander
 
1 large cucumber, peeled, halved lengthwise, seeded, and cut into matchstick strips
 
1 small sweet red pepper, cored, seeded, and cut into matchstick strips

Directions

In a medium size bowl, combine the yogurt, sesame oil, vinegar, ginger, cumin, and coriander.
Add the cucumber and red pepper and toss well.
Cover and chill in the refrigerator for 2 to 3 hours, tossing occasionally.
