Spiced Cream Of Carrot Soup Recipe
Ingredients
2 cups sliced carrots
2 1/2 cups Chicken Stock
1 bay leaf
1/2 teaspoon grated orange rind
Dash of cinnamon
Dash of ground cumin
Dash of chili powder
1/2 cup orange juice
2 tablespoons low-fat yogurt
Carrot curls (garnish)
Dill sprigs (garnish)
Directions
Place the carrots, stock, bay leaf, orange rind, cinnamon, cumin, and chili powder in a large saucepan.
Bring to a boil, then reduce heat, cover, and simmer until the carrots are soft, about 15 to 20 minutes.
Place the cooked carrot mixture in a blender.
Add the orange juice and yogurt.
Process on low speed until smooth.
Place in a soup tureen or individual bowls and garnish with carrots and dill, if desired.
