Spiced Cranberry Shrub Recipe
Spiced cranberry shrub is a spiced fruit drink. Prepared with seltzer water, apple juice and cranberry juice cocktail, the spiced cranberry shrub is flavored with lemon peel and served chilled. Great for a summer day!
Ingredients
| 1 1/4 cups cranberry juice cocktail | ||
| 1 1/4 cups unsweetened apple juice or cider | ||
| Cider vinegar | 1/4 Cup (16 tbs) | |
| 1 cinnamon stick, cracked | ||
| Whole Cloves | 2 | |
| 2 strips lemon peel, about 2 inches long and 1/2 inch wide | ||
| 2 cups sodium free seltzer water | ||
| 4 thin orange slices | ||
Directions
In a small heavy saucepan (preferably nonmetallic), place the cranberry juice cocktail, apple juice, vinegar, cinnamon stick, cloves, and lemon peel, and bring to a boil over moderately high heat.
Adjust the heat so that the mixture barely bubbles, cover, and simmer for 15 minutes.
Cool and strain into a 2 quart pitcher.
Fill 4 12 ounce glasses with ice cubes, divide the cranberry mixture among them, and top with the seltzer water.
Stir briskly and garnish each drink with an orange slice, if you like.
