| Corned beef | 1 1/2 Kilogram | |
| Turmeric | 1 Teaspoon | |
| Cayenne pepper | 1/2 Teaspoon | |

| Peppercorns | 5 To taste | |
| Vinegar | 1/2 Cup (16 tbs) | |
| Sugar | 1/4 Cup (16 tbs) | |
| Cloves | 4 | |
| Bay Leaf | 1 | |
Directions
Weigh and allow 35-40 minutes of cooking time per 500 gms (1 lb) meat.
Thoroughly dry raw corned silverside with a paper towel.
Combine turmeric and cayenne pepper.
Rub it onto outside of meat.
Place in a large saucepan and cover with water.
Season with peppercorns, vinegar, sugar, cloves and the bay leaf.
Bring to boil, reduce heat and simmer gently for remaining time.
Remove from water.
Wrap in foil to keep moist and continue to cool slowly.
