Spiced Chicken Recipe
Ingredients
| 1 - 4 lb. chicken, cut up | ||
| Black pepper | 1/2 Teaspoon | |
| Salt | To Taste | |
| Onions | 3 Medium, chopped | |
| Butter/Margarine | 2 Tablespoon | |
| 2 tbsp. brown or Demerara sugar | ||
| Red wine | 1 Cup (16 tbs) | |
| 1 tbsp. cloves, slightly crushed | ||
| Vinegar | 3 Tablespoon | |
| Cinnamon sticks | 2 | |
| Nutmeg | 1/2 Teaspoon | |
| 2-3 tbsp. soya sauce | ||
Directions
Rub chicken pieces with salt and pepper and brown in butter.
Remove chicken from pan and saute onions.
Then add sugar, wine, spices and vinegar.
Put the chicken back in the pan and slowly simmer in the liquid till done, adding the soya sauce at the end.
If the liquid evaporates too quickly, add boiling water, because there should be liquid left when the chicken is done.
Thicken with potato starch.
Serve with mashed potatoes, warm apple sauce or stewed dried fruit.
