Spiced Cheese Stuffed Pepper Rings Recipe
Ingredients
| 1 pound cream cheese, room temperature | ||
| 4 ounces shredded Gruyere cheese | ||
| Unsalted butter | 1/4 Cup (16 tbs) | |
| Dijon Mustard | 1 Tablespoon | |
| 2 to 3 teaspoons imported sweet | ||
| Hungarian paprika | ||
| 12 slices spicy Italian salami, chopped | ||
| Green onions | 6 , minced | |
| Ground pepper | 1 To taste | |
| 3 each red and green bell peppers, stemmed, deveined and seeded | ||
| Fresh spinach or lettuce leaves (garnish) | ||
| Salt | To Taste | |
Directions
Combine cream cheese, Gruyere, butter, mustard and paprika in processor and mix until smooth.
Turn into medium bowl.
Add salami and green onion, mixing until well blended.
Season with salt and pepper to taste.
Stuff peppers with cheese mixture, packing down with back of spoon.
Chill for several hours or overnight.
To serve, arrange spinach or lettuce leaves on platter.
Thinly slice peppers and arrange in fan pattern over leaves, alternating red peppers with green.
