Spiced Cauliflower With Tomatoes Recipe
Spiced cauliflower with tomatoes is a light and flavorful vegetable recipe. Flavored with ground cumin, coriander, garlic and cayenne amongst others, the spiced cauliflower with tomatoes is finished with a dash of lemon juice. Sprinkled with parsley, it is excellent wth rice.
Ingredients
1 small yellow onion, chopped
2 cloves garlic
1 1/2 tablespoons minced fresh ginger or 1/2 teaspoon ground ginger
1 large ripe tomato, cored and chopped, or 1 can low sodium tomatoes, drained and chopped
3/4 teaspoon each ground cumin and coriander
1/4 teaspoon ground turmeric
1/8 teaspoon each black pepper and cayenne pepper
1/2 cup water
4 cups cauliflower florets
2 teaspoons lemon juice
2 tablespoons minced parsley
Directions
In an electric blender or food processor, puree the onion, garlic, ginger, and tomatoes by whirling for 10 to 15 seconds.
Transfer to a heavy 12 inch skillet, add the cumin, coriander, turmeric, black pepper, cayenne pepper, and water, and bring to a boil.
Adjust the heat so that the mixture bubbles gently, and simmer, uncovered, for 5 minutes.
Mix in the cauliflower, cover, and continue to simmer until the cauliflower is just tender about 12 minutes.
Stir in the lemon juice and parsley.
