Ingredients

 Cantaloupes4
 2 teaspoons powdered alum
 White vinegar2 Cup (16 tbs)
 Sugar4 Cup (16 tbs)
 Cinnamon sticks4
 1 tablespoon each of whole cloves and allspice

Directions

Peel melons; cut into halves and remove seeds and fiber.
Cut into 1/2 inch cubes.
Mix 3 quarts water with alum and add melon.
Let stand overnight; drain.
In preserving kettle mix vinegar, sugar, 1 cup water, and spices tied in cheesecloth bag.
Add melon; cover and boil for 15 minutes.
Pack melon into hot sterilized jars.
Pour in syrup to within 1/2 inch of top.
Put on cap, screwing band tight.
Put on rack in kettle.
Add boiling water to 1 inch over jars.
Bring to boil and boil for 10 minutes.
