Spiced Artichoke Spread Recipe
Ingredients
1 package (10 ounces) frozen artichoke hearts, thawed, or 1 can (14 ounces) artichoke hearts, drained
1 tablespoon plus 1 1/2 teaspoons spicy mustard
1 tablespoon plus 1 1/2 teaspoons nonfat or reduced-fat mayonnaise
1/8 teaspoon cayenne pepper
1/4 cup grated nonfat Parmesan cheese
Directions
1. Place all ingredients except 2 tablespoons of the Parmesan cheese in a food processor or blender, and process until chunky.
2. Coat a small casserole dish with nonstick cooking spray. Place the artichoke mixture in the dish, top with the remaining Parmesan, and bake at 350°F for 25 to 30 minutes, or until the cheese is lightly browned.
