Spiced Apple Amber Recipe
Ingredients
250 g (8 oz) cooking apples, peeled, cored and sliced
2 teaspoons honey
1/4 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
1 tablespoon water
1 egg, separated
25 g (1 oz) caster sugar
Directions
Place the apples, honey, cinnamon, nutmeg and water in a saucepan.
Heat gently until the apples are tender.
Cool slightly, then sieve or puree in an electric blender.
Beat in the egg yolk, then spoon into a buttered 600 ml (1 pint) ovenproof dish.
Whisk the egg white until stiff, then whisk in half the sugar.
Fold in the remainder and spoon over the apples.
Cook in a preheated moderate oven, 180°C (350°F), Gas Mark 4, for 10 to 15 minutes.
