Spice Raisin Cake Recipe

Ingredients
1/3 cup all-purpose flour
1/2 cup granulated sugar
1 tsp granulated fructose
2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
2/3 cup skim milk
1 egg
2 tsp margarine, softened
1 tsp vanilla extract
1/2 cup plumped raisins
Directions
Combine flour, sugar replacement, fructose, baking powder, cinnamon, nutmeg, cloves, and ginger in a medium-sized bowl.
Add milk, egg, margarine, and vanilla.
Beat on low for 30 seconds.
Then beat on high for 1 to 1 1/2 minutes.
Fold in raisins.
Transfer batter to a well greased and floured 9 in. (23 cm) round baking pan.
Bake at 350°F (175°C) for 25 to 30 minutes or until pick inserted in middle comes out clean. (The all-purpose flour makes this cake a little heavy.
If you prefer a lighter cake, sift the dry ingredients together several times before adding the liquid ingredients.)
