Spice Cookies Spekulatius Recipe
Ingredients
| 1 1/2 cups unbleached white flour | ||
| Whole wheat pastry flour | 1 Cup (16 tbs) | |
| Sugar | 1/2 Cup (16 tbs) | |
| Baking powder | 1 1/2 Teaspoon | |
| Cinnamon | 1/2 Teaspoon | |
| 1/2 tsp. carob or cocoa | ||
| Cloves | 1/8 Teaspoon | |
| 1/4 cup unsalted margarine | ||
| Egg whites | 2 | |
| Milk | 1/4 Cup (16 tbs) | |
Directions
Combine dry ingredients.
Cut in margarine.
Stir in egg white and milk.
Mix to form a dough.
Roll out dough to 1/4" thickness.
Cut out cookies with a 3" cookie cutter.
Or press dough into a well-floured wooden Spekulatius mold, cut away excess dough and flip cookie out onto a lightly greased cookie sheet.
Bake at 350° for 8 to 10 minutes.
Cut in margarine.
