Ingredients

 
500 g/1 Ib boneless fish; cut into fillets
 
4 tbsp any cooking oil
 
2 tbsp olive oil
 
1 tsp red chilli powder or paprika
 
chopped fresh parsley or coriander/ cilantro
 
2 tbsp fresh pomegranate juice or lemon juice
 
SEASONED FLOUR
 
1/2 cup flour
 
2-3 peppercorns
 
1/4 tsp ground ginger
 
1/4 tsp cumin seeds
 
1/4 tsp all spice powder
 
1/4 cinnamon stick
 
2 cloves
 
1/2 tsp salt
 
1/4 tsp nutmeg powder

Directions

In a mixer blend together all the ingredients for the seasoned flour.
Remove to a plate.
Roll the fish fillets in seasoned flour to coat both sides, shaking to remove any excess flour.
In a nonstick frying pan/skillet, heat 4 tbsp oil.
Add fish to the hot oil in batches and cook until golden brown for about 2 minutes per side shaking the pan to prevent the fish from sticking.
Remove and drain on paper towels.
Heat the 2 tbsp olive oil in a separate pan.
Add the red chilli powder or paprika.
Cook for 1/2 a minute on low heat till the oil is infused with the chilli.
Remove from heat.
Add fried fish to this pan.
Coat well.
